Short bread cookies comes a long way since the 12th century, when butter was added to bread dough, making it short bread. Interestingly the sweet biscuit we know today wasn’t that sweet back in the day. Only when sugar was introduced to the UK it became a sweet treat.
You ask what makes it a short bread cookie? Well usually it exists out of flour sugar and a huge amount of shortening.
We improvise on the other hand.. and this recipe came out great!

Shortbread biscuits with Jam center
Our basic ingredients are:
- flour
- bread
- butter
- vanilla essence
- sugar
- eggs
- small amount of baking soda
- any jam you’d like as the filling
For great shortbread, regardless of your chosen recipe:
- Sift the flour to help prevent lumps.
- Don’t over mix
- Chill the shaped dough thoroughly before baking.
- The cookie needs to be cut while still warm, this will give it smooth and even edges.
