I just call it what it is.. Baked Baby Marrows which we are going to use in this recipe, but most people call it Zucchini or Courgette (It’s just a few of the many summer squashes out there, you can use any for this recipe).
“The zucchini, Courgette or baby marrow is a summer squash, a vining herbaceous plant whose fruit are harvested when their immature seeds and epicarp are still soft and edible. It is closely related, but not identical, to the marrow; its fruit may be called marrow when mature”. Wikipedia
It is a high in fiber, low in fat and rich in antioxidants, making this the ideal veggie for dieters.
This is a specific veggie I love to use. Especially when baked with some cheese and bacon as filling. Here are some suggestions to use it (*please note: these you will have to research.. I am only giving some ideas, Thanks) :
- Make a baby marrow Salad
- Baby marrow soup
- Pasta/ Spaghetti made from baby marrows
- Baby marrow Fritters
- Baby marrow fries
- Lemon pepper roasted baby marrows
- Rosemary , salt and pepper oven roasted baby marrows
- add cheese and fillings on top and grill
- Stuff baby marrow with ground beef.
- . . .
and these examples mentioned above are just a few ideas. There are so many more you can do with this tasty veggie.
How to store baby marrows?
- unwashed
- in refrigerator
- in a plastic bag with one end open for circulation or
- in foil
- (both ways will keep 1-2 weeks, though you will see the skin shrivel over time)
