Unfortunately I don’t have a video this time, but I’m going to share the recipe below.
I made chocolate brownies one day (which I will deffinately share the recipe), but wondered what it would taste like if I have replaced it with coffee and peanut butter.
This sweet bite you can have at teatime or dessert, with some ice cream or whipped cream.
To start off, this will not take longer than 10 minutes to prep and about 35- 50 minutes baking time (depending on your oven) you can press a toothpick in the middle and when it comes out with crumbs or clean, its done!!
You MUST give it some resting time after you have baked this sweet dessert.
It gives the brownie time to cool off and set (about 20 minutes – 30minutes) the top will become crunchy and the inside soft.. Just how we usually would like a brownies texture to be like!
– Tip: you wont be dissapointed if you left it overnight on a counter in a bowl with a lid (doesnt have to be airtight) – It does make a difference to texture and taste 🙂
You will need a mixing bowl, whisk, scraper, wooden spoon, wax paper or foil, cooking spray and baking tray of plus minus 20 -25 cm.

Coffee and Peanut butter brownies:
Ingredients:
- 1 half cup flour
- Half teaspoon salt
- 2 eggs
- 1 cup melted unsalted butter / margarine (until just melted)
- 1 cup sugar
- 1 teaspoon vanilla essence
- 2 tablespoons instant coffee mixed with 2 tablespoons water
- 3 tablespoons Peanut butter

Method:
- Wisk melted butter and sugar together till light in color.
- Add vanilla essence and one egg at a time while you Wisk.
- Sift in the flour and add the salt
- Mix in with a spoon, the spoons full of peanut butter (optional to add more or use Chunky peanut butter) and coffee
- Don’t over mix!!
- Prepare a baking dish with wax paper or foil and spray with cooking spray.
- Add the mixture and bake at 180°C for 35 – 50 minutes (depending on your oven).
- Poke with a toothpick to see if it is done.
- How do I know when its done?
- When the toothpick comes out clean or with crumbs.
- Middle will be soft and top will harden when taken out of the oven to cool down.
- Let cool for about 20 – 30 minutes and enjoy with some ice cream or whipped cream.
- (Note that the next day the texture and taste will definitely be a bit better.) – optional.
- Keep outside fridge in a cool dry place in a container.
