What a Tasty pudding you must try! Have with some Cream or ice cream and apricot jam (the sourness of the apricot jam works so well with this recipe)

Have ready: only a fork, microwaveable cup, whisk, wooden spoon and baking dish.
You can mix everything in the dish you are going to bake in. So you won’t have too many washing and cleaning to do.
I’m going to give a recipe on a microwave ginger bread pudding and oven baked ginger bread pudding.
Ginger bread pudding:
In the microwave:
- 1 egg
- 1 tablespoon sugar
- Half cup milk
- Half teaspoon vanilla/ caramel essence
- 1 slice of bread
- Ground ginger
- Ground nutmeg
- Ground cinnamon (optional)
Method:
- Mix with a fork, in a big microwaveable mug the egg, sugar and vanilla/ caramel essence
- Add the ground ginger, ground nutmeg and cinnamon (optional)
- Break bread in small rough pieces and mix in with the egg mixture.
- Microwave on high for +- 5 minutes.

In the oven:
You will have to work this out per person. You take the ingredients above, of the microwave bread pudding and multiply by the number of people you will have (example if you have 4 people, you will use 4 eggs, 4 tablespoons sugar, ect.)
This recipe below yields servings for 4 people.
Preheat the oven to 180 degrees celsius.
Ingredients:
- 4 eggs
- 4 tablespoons sugar
- 2 cups milk
- 1 teaspoon vanilla/ caramel essence
- 4 slices of bread (you might need 1 more in this case)
- 1 teaspoon ground ginger
- Half teaspoon ground nutmeg
- 1 teaspoon cinnamon (optional)
Method:
- In a sprayed baking dish, add the eggs, sugar and vanilla/ caramel essence and mix well
- Add the ground ginger, nutmeg and cinnamon (optional)
- Break bread slices into rough smaller pieces and mix in with the rest of the ingredients.
- Bake at 180 degrees Celsius for 35 – 45 minutes depending on your oven.
Serving suggestion:
- Serve hot or cold
- Add apricot jam for a great sour taste
- Add cream or ice cream tot op it off.
