I’ll use this as a side any day. It makes a tasty sweet dish you can add on to any meal anytime of the day.
I grew up with this recipe. The smell takes me back in time, straight to Mom’s kitchen.

So Quick and easy to make! You must follow this recipe.
Caramelized Sweet potatoes:
Ingredients:
- Sweet potatoes
- Brown Sugar
- Salted butter
- 1 Cup water
- a pinch of salt
- Vanilla/ Caramel essence
Method:
- In a medium Pot with a lid:
- add washed and peeled, round, thin sweet potato slices.
- add half a cup Brown sugar. (you can adjust and add more)
- about 3 tablespoons unsalted butter
- cover bottom of pot with water.
- add pinch of salt and 1 teaspoon of vanilla essence/ caramel essence.
- cover with lid and bring to a boil till water almost evaporated.
- remove lid and let the water and juices evaporate fully.
- turn heat lower and in the bit of sugar sauce you hear sizzling in the pot, fry the sweet potato to get a sweet, soft, sweet potato toffee flavor.
- Turn heat off and serve immediately.
