If it is for guests, a birthday, function or even just dinner time, this baked Chicken Gordon Bleu is not one to miss. I Will definitely make this again.
What a delicious recipe for anytime, anywhere! Just add French fries, veggies or rice on the side and you are all good.

Crumbed Chicken Gordon Bleu, filled with Feta, Spinach & Tomato:
I added fresh bread crumbs on top of the Gordon bleu before baking, it gives that extra crunchiness and taste.
Ingredients:
- Chicken fillets
- Salt
- Pepper
- Thyme
- Oil
- small spinach leaves
- feta
- cheddar
- tomato
- Peppadew
The bread crumbs:
- With the bread crumbs, in a separate bowl, I added a bit of oil to the crumbs, salt, pepper and Thyme.
- keep aside
The filling:
- Spinach leaves placed on top of the pounded chicken fillet. (More about Gordon bleu here)
- on top of the spinach leaves add the tomato, spinach, grated cheddar, peppadew and feta that you grinded/ or chopped in the twister till finely chopped and mixed.
- finish the Gordon bleu off by rolling it up like a burrito.
- Press tooth picks in from the sides to keep the meat together.
- heat some oil in a pan and brown the chicken on both sides, but don’t cook through.
- Place in a baking tray and cover with the breadcrumbs mix.
- Place in a pre heated oven at 190 degrees Celsius and bake for 30 – 35 minutes
