Sweet n Sticky Ramen noodle with Chicken and veggies:
How we did it:
– cook mixed veggies and set aside (corn, Green beans, peas, diced carrot)
– hard boil 1 egg – remove center and add mayo and sweet chili sauce, place mixture back inside the hard boiled egg white and keep aside for plating.
– sauté some onions, green bell pepper and celery and add to the cooked through strained mixed veggies.
– in the same medium pot that the onions was in, add 100ml brow sugar + 30ml Worcestershire sauce or soya sauce and 15ml Chipotle or any BBQ sauce.
-cut chicken fillets into strips and then blocks, add salt and pepper to taste. adding it to the sweet sauce in the pan and cook till chicken is done.
– in a large bowl, add 3 packets of only the ramen / 2minute noodles and 3 cups water.
– Boil till cooked through.
-strain the noodles and add the cooked, sweet and sticky diced chicken and the sauce to the big pot along with the cooked veggies, sautéed onion and ramen noodles.
-mix and place spoons full in some bowls, adding the filled half egg on top to finish off and serve with chopsticks.
