This is a famous South African dish and can be very time consuming, SO I introduce a microwave version and will be done in less than 30 minutes. Quick and easy right?
We are going to make this quick and easy Bobotie and yellow rice in less than 30 minutes in the microwave.

Microwave Bobotie in less than 30 minutes:
Yields 4 portions
Ingredients:
– onions diced
– ground beef or lamb mince
-15 ml oil or butter
– 2 slices of bread
– 200ml milk
– 15ml lemon juice
– 1 tsp turmeric
– 2 tsp curry powder
– salt and pepper
– apricot jam
– 2 eggs
– 2 bay or lemon leaves
Method:
– microwave butter or oil and chopped onions in a bowl with a lid, for 4 minutes
– meanwhile soak the bread in half of the milk and keep rest of the milk aside.
– add rest of ingredients, except: remaining milk, eggs and bay or lemon leaves. Mix thoroughly.
– cover with a lid and microwave on HIGH for 5 minutes, stirring, cover with a lid and put back for another 5 minutes on high.
– take out of microwave, add salt and pepper to taste and stir well. smooth the top. Garnish with bay or lemon leaves.
– in a separate bowl, beat the eggs and milk together and pour over.
– put in the microwave uncovered and microwave on medium for 10 to 12 minutes.
Serving suggestion:
-serve with yellow rice,
-nuts,
-coconut and
-bananas
