We didn’t eat meat at all and had a bowl of this delicious Vegetarian Cauliflower curry.
It was so filling!
You have to try this recipe, its easy, quick and not very time consuming.

Here is how we did it:
Vegetarian Cauliflower Curry
Ingredients:
- 1 Cauliflower head, washed and cut/break into smaller pieces
- 3 – 5 tablespoons Olive oil
- 1 and half teaspoon curry
- 1 teaspoon salt
- 1 teaspoon ground pepper
- 2 teaspoons lemon juice
- 1 teaspoon coriander
- 1 teaspoon mixed herbs
Method:
- Pre heat oven to 210°C
- Add cauliflower pieces to a big bowl.
- Add the olive oil, salt, pepper and curry and toss pieces around to mix thoroughly.
- Prepare a sprayed baking tray.
- Add the cauliflower pieces, leaving enough space between them.
- Bake 10 minutes and then turn each piece around to bake on the other side for another 6 minutes.
- Take out of the oven when done. Add back to the big bowl and add 2 teaspoons lemon juice and the 1 tsp coriander + 1 teaspoon mixed herbs.
- Mix thoroughly and serve warm.
