Bacon Stuffed Potatoes!!

This stuffed, bacon filled potato got us crazy over baked potatoes.

This is a different recipe for a change and so delicious.

You don’t need many ingredients.

Here is how we did it:

Bacon Stuffed Potatoes!!

Ingredients:

  • Pre cooked Potatoes – cooked whole
  • Salted butter
  • Milk
  • Diced and fried bacon pieces
  • Bread crumbs
  • Olive oil
  • Salt
  • Pepper
  • Mixed herbs

Method:

  • Take pre cooked whole potatoes and cut a small piece off the one side in a straight line so that the potato would stand up.
  • Cut in another straight line a small piece off the top.
  • With a teaspoon dig out the potato and keep the soft insides in a separate bowl.
  • Add salted butter and mix thoroughly with a fork, add a bit of milk and mix through. (should still be lumpy) – keep the bowl aside.
  • Meanwhile, dice some bacon and fry till done and crispy. Add to the mashed potatoes and mix through.
  • Add teaspoons full of the bacon and mashed potato mix to the “potato bowl” – set aside
  • Mix in another small bowl some breadcrumbs with olive oil, salt, pepper and mixed herbs.
  • Add a spoon full on each stuffed potato.
  • Transfer the potatoes to a sprayed baking tray and bake for 30 minutes @ 180°C
