This pineapple upside down cake recipe, got us crazy over cakes. The outcome is so soft and juicy. Only bake for 22 minutes. What a quick and easy recipe!

Pineapple Upside down, white chocolate cake
Ingredients:
- Pineapple pieces or pineapple rings
Dry ingredients :
- 1 1/2 cup flour
- 1/2 cup brown sugar
- Pinch salt
- 2 tsp baking powder
- 1/4 tsp baking soda
- 1/2 cup white chocolate chips
Wet ingredients (a separate bowl) :
- 1 cup boiling water
- 1 tsp vanilla essence
- 1/cup oil
- 25ml brown vinegar.
Method:
- Pre heat the oven to 180 degrees Celsius.
- In a big bowl add all the dry ingredients and mix through.
- In a separate bowl mix the boiling water, oil, brown vinegar and vanilla essence.
- Make a well in the dry ingredients and add the oil and boiling water mixture. – mix thoroughly.
- Prepare a sprayed round baking tray. And add the pineapple rings or pieces to the bottom of the baking dish in an even layer.
- Slowly add the cake mixture on top preventing the pineapple pieces to separate.
- Bake in a pre heated oven at 180 degrees Celsius for 22 – 25 minutes.
- Let it cool down and serve.
Serving suggestion:
- Serve with cream
- Serve with ice cream
- Add a bit of coconut on top
