Everyone has heard of the Cherry pie, but have you tried this delicious recipe before?
I had to share this recipe with you since I got caught up in a article reading that they believed that pies arrived in the united states with the first English settlers back in the day. This famous pie as you know it is being made and eaten to celebrate the 3rd Monday in February, Presidents’ day of George Washington.
This is a sweet pastry. Some are having this for breakfast and some dessert.

No Fail CHERRY PIE
Ingredients:
Crust:
3 cups flour
1 egg, lightly beaten
1 tablespoon white vinegar
1 cup room temperature butter
Pinch of salt
4 – 5 tablespoons water
1/4 teaspoon baking powder
1 egg for egg washing the dough
Filling:
Cherries (fresh or canned – should have no stems)
3/4 cup sugar
1/4 corn flour
1 teaspoon vanilla essence
Pinch of Salt
Method:
Crust:
- Cut the shortening/ butter into the flour till fine/ grainy
- Add the rest of the ingredients and combine. (do not overmix) and bring dough together to form a rectangular shape.
- Flour a surface and divide the dough into 3 equal sizes.
- Store in the fridge for 30 minutes or in the freezer for 15 minutes.
- When ready, spray a round foil or any oven safe round baking pan.
- Roll out one of the dough balls, keeping the rest still in the fridge or freezer and place in the baking dish, pressing slightly against the sides to make it fit.
- Poke the base with a fork and bake for about 5 minutes.
- Meanwhile prepare the filling and the rest of the dough will be rolled out and cut into strips to place on top at the end:

Filling:
- Add the cherries, sugar, vanilla essence, salt and corn flour to a pot and bring to a light simmer for about 10 minutes.
- Scrape the filling onto the base and even out.
- Rolling the rest of the dough out and cut into thin strips. Weave a lattice pie crust.
- Whisk an egg and egg wash the crust.
- Bake 35 to 40 minutes in a pre heated oven at 180°C or until crust starts to brown.
Serving suggestion:
- Add brown sugar on top of the crust before baking (optional, the pie is already sweet)
- Serve with ice cream
- Serve with whipped cream
- Serve hot or cold
- Top off with a dash of sifted icing sugar.
