No eggs!! What a delicious chocolate cake! This recipe is so quick and easy to make, do not forget to share with friends and family.

Here is how we did it:
Chocolate Log Roll Cake – No Eggs!
Ingredients:
Butter Icing – filling:
- 500g Icing sugar
- 1 cup Butter room temperature
- Vanilla essence
Cake:
- 3 cups flour
- 4 teaspoons baking powder
- 1 teaspoon baking soda
- Pinch of salt
- 1 cup cacao
- 2 cups brown sugar
- 1 cup oil
- 2 cup boiling water
- 1 teaspoon vanilla essence
- 1/5 cup brown vinegar
Method:
- Pre heat the oven to 180°C
- Prepare a sprayed baking tray and set aside.
- In a large bowl, combine all the dry ingredients of the cake.
- In a separate jar add the boiling water, vanilla essence, oil and brown vinegar.
- Mix thoroughly with a fork.
- Add the wet ingredients to the cake mixture and mix till well combined.
- Spread the mixture in the prepared flat baking tray.
- Bake at 180°C for 22 minutes.
- When done, take out of the oven and let cool completely.
- Meanwhile, In a big bowl, with electric whisk, whisk the room temperature butter till light and fluffy.
- Add the icing sugar gradually and then the teaspoon of vanilla essence.
- When the cake has cooled completely, spread the vanilla butter cream evenly over the cake, not touching the sides.
- Roll the cake from one end to the other and take some plastic wrap/ cling wrap to press together, because this cake will break a bit, but pressing it together with the film will help keep it together whilst refrigerating.
- Put in the fridge for a few minutes or till serving.
- Serving suggestion:
- Before serving give a dash of sifted icing sugar or cacao on top to finish it off.
- Serve with cream or ice cream
