These always make the best sweet side dish. You can never go wrong with pumpkin fritters or as we call it in Afrikaans in South Africa, “pampoen koekies”

Here is how we did it:
Pumpkin Fritters
Ingredients
- 2 cups cooked pumpkin
- 60g flour
- Pinch of salt
- 5ml baking powder
- 2 eggs
- Cinnamon sugar
Method:
- Mix everything together in a big bowl, except the Cinnamon sugar.
- In a pan, heat some oil.
- Add spoons full of the pumpkin mixture and shallow fry till golden brown on each side
- Transfer to kitchen towel/ paper to get rid of the excess oil.
- Sprinkle with cinnamon sugar on both sides.
- Your bite is ready to be served.
