Below is a brief guide on how to make Watermelon preserves.

Here is how we did it:
Watermelon preserves
Ingredients:
Preparing the rind:
- 6 cups watermelon rind.
- 1/4 cup salt dissolved in
- 2/4 cup warm water.
For the preserves:
- prepared watermelon rind
- 4 cups sugar
- 1/4 cup bottled lemon juice
- 7 cups warm or cold water
- 3 small cinnamon sticks
- 5 whole cloves
- 2 cardamom pods
Method:
– Prepare the rind:
- trim green skin and pink flesh from watermelon rind. (enough for 6 cups) let rind rest in cold water for 5 minutes.
- dissolve the salt in the warm water and pour over the rind.
- cover and refrigerate for 6 hours.
- drain and rinse in cold water.
- cover rind with cold water again and let it stand for 30 minutes drain the water.
- in a large saucepan, cover the rind with water and bring to a boil.
- lower the heat and boil for 10 – 15 minutes.
Making the watermelon preserves:
- in a stock pot, add the sugar, lemon juice and 7 cups water.
- bring the mix to a boil.
- lower the heat and simmer uncovered for 5 -6 minutes.
- stir in the rind.
- add the cinnamon sticks, whole cloves and cardamom pods.
- bring to a boil again.
- reduce heat to simmer for 45 minutes uncovered.
- remove the cinnamon sticks, whole cloves and cardamom pods remove from heat.
- ladle hot mix into sterilized jars, leaving 1/4 -in headspace.
- wipe the rims and place lid on jars until fingertip tight.
- place jars into a very hot sink or deep bowl with hot water. (water must not cover or touch the lid) let the jar cool completely in the water. wipe and store in a cool dry place or in the fridge
Serving suggestion:
- Enjoy with toast
- Place on a cheese platter
- add to waffles
